Mix the mayonaise and the sour cream in a big bowl.

Cut the apples into small cubes.

Slice the herring into 2 inches slices and mix them with the apples, dill, capers, leek, curry and the sour cream mixture. Season with salt, pepper and lemon juice.

Place in a cool place for about 24 hours before serving.
