    On the list of the most sustainable, delicious and healthy fish, herring rules supreme.We have a millennia long tradition in eating fish in Scandinavia.

    Serves 2

    PREPARATION:

    • 1 Finely chop the herring.
    • 2 Mix with mustard, celeriac, celery, dill, chervil, and oil.
    • 3 Form into two or four rounds and place on top of toasted rye bread. Place a quail egg yolk on top.
