    Quick-cured salmon with elderflower, dill and roasted garlic mayonnaise

    Servings: 8

    PREPARATION:

     
    • 1

      Slice the salmon thinly and put on a plate.

    • 2

      Mix the syrup with the lemon juice, salt, cider, dill and onion in a bowl.

    • 3

      Pour the marinade over the fish – making sure it covers everything.

    • 4

      Season with freshly ground pepper. Let sit for 10 minutes before serving.
