When meat is raw, you can really taste its flavor. This is a sort of Norwegian carpaccio.
Serves 4-6 as a starter
Prepare this dish straight onto the plate on which you are going to serve it. Brush the plate with vinegar and sprinkle grated cheese over the top so that it sticks to it. Arrange the meat on top. Decorate with clover, chive flowers and dog roses. Add salt to taste.
