Musk ox has a surprisingly mild gamey flavor. You can also use venison for this recipe. If you cannot find fresh or frozen cloudberries, use cloudberry preserves (in that case you will not need cloudberry syrup).
- 1 Season the meat with juniper berries and salt. Fry it in butter with the mushrooms in a hot pan. Cook until it has reached a core temperature of 130 oF (55oC).
- 2 Rest for 10 minutes before serving. Serve with cloudberries, cranberries, and cloudberry syrup.
