Chili and Vinegar Herring

PREPARATION:

Place the herring onto a plate and drizzle with vinegar.

Let it marinate for a few minutes while making the potato salad.

In a bowl, combine the potatoes, sour cream, mustard, scallions and chives and toss together until thoroughly mixed.

Plate the fish and sprinkle with chili and chives.
- 5
Serve with potato salad.
