    Leg of Lamb with Sardine Sauce

    PREPARATION:

    • 1

      In a small bowl, crush the sardines into a coarse paste, using a fork.

    • 2

      Add the mayonnaise, onion, pepper, lemon juice and mustard (if using) and stir.

    • 3

      Arrange the sliced meat flat onto plates, covering all but the rim of the plate (if you want to mimic the ‘Vitello Tonnato’ look).

    • 4

      Drizzle with the sauce and sprinkle with the beets and cucumber.
