    This is eggs and smoked salmon in a new way. Instead of serving scrambled eggs with smoked salmon, the eggs are not scrambled, and the smoked salmon is within the eggs. The truffle oil makes the dish seem very advanced, but it is really simple to make. Serves 3 as a starter.

    Smoked Salmon with Baked Egg with Truffle Oil

    PREPARATION:

    • 1

      Preheat oven to 250 degrees (125 C).

    • 2

      Crack three eggs and add each to three small, greased ovenproof cups. Sprinkle the eggs with pepper and coriander. Chop 1 slice of the salmon and add a third of it in each cup. Add a few drops of truffle oil to each cup. Using the backside of a knife stir in the salmon and the spices into the egg whites. Add half the chives and stir again.

      Bake in the oven for 15 – 20 minutes or until the egg white is firm.

      Add one slice smoked salmon to each slice of bread. Turn out the egg and place on top of the salmon. Garnish with salmon roe and chives.
