Heat a grill or the oven broiler. In a medium pot, bring water to a boil.
Add asparagus and boil for one minute. Strain. (If you do not intend to proceed to grilling right away, stop the boiling process by plunging the asparagus into ice cold water, leaving the water running.
Pat dry and keep cool until just before serving.) Mix sugar and spices. Drizzle asparagus with oil, sprinkle with spice mixture. Place the asparagus on the grill or under the broiler.
Gently grill or broil until asparagus starts to brown and the sugar-spice mixture caramelize. Garnish with sour cream, chives and salmon roe.
