Pork roast is delicious, but shoulder of pork is even better. It takes some time to roast and tastes wonderful with apples and onion.
Preperation:

Cut an intesecting pattern in the crackling with a sharp knife. Season with salt and pepper.

Put the meat in an ovenproof dish with 2 cups of water.

Preheat the oven to 430 degrees.

Roast for 20 minutes.

Reduce the temperature to 300 degrees and cover with aluminum foil.

Roast at 300 degrees for two hours.

Remove the foil and increase the temperature to 390 degrees.

Cut apples and onions into quarters.

Put the meat on a grate and put apples and onions in a dish under the meat. Keep roasting until the apples and onions are tender, approximately 30 minutes.

Turn on the grill for a few minutes if the crackling isn't crisp.

Let the meat rest a while before serving. Use the gravy as sauce.
