This is where you can catch the really big salmon, weighing as much as 40, maybe 50 pounds. The Namsen River was made famous by the salmon lords in the 1840s. Since then, the rich and powerful from all over the world have come to the Namsen River, the most prominent among them probably being Sir Winston Churchill and former US President Franklin D. Roosevelt.
Fishing for Salmon
Andreas goes fishing for this famous salmon. In the scenic surroundings of the Namsen River, he creates Salmon Carpaccio with Lingonberries as a quick appetizing snack.
Viking Barrows
A thousand years ago, the Vikings lived along this river, and salmon was a staple of their diet. You can still see the traces of the Vikings from the impressive barrows that they left behind.
The Menu
The starter today is a delicious dish based on salmon roe. These large eggs have a great taste and are quite affordable compared to the expensive Russian caviar. Andreas prepares Cumin-Baked Parsnips with Salmon Roe.
The main dish is an eclectic variation on baked salmon. Andres composes four different versions of oven baked salmon, all inspired by international cuisine. These include the Slow-Baked Salmon with Soy Sauce and Ginger, Salt-Baked Salmon with Simple Chervil Mayonnaise, and Spice-Crusted Salmon with Aquavit Sour Cream.
