Andreas makes haddock “envelopes” stuffed with carrots, saffron, cabbage and prosciutto. Then, he makes a brightly colored salad with smoked haddock. After a trip to Scotland to meet the official fish-and-chips champions, he prepares a smoked version of the dish.
