Creamy Grains with Smoked Trout and Flamed Vegetables

Preparation:
Ingredients
A tasty combination with smoked trout, cabbage, carrots and a dash of cultured milk.

PREPARATION:

 

  • Make a fireplace and use only birch wood
  • Put the juniper branches in water for 30 minutes
  • Finely chop the shallot and garlic cloves and sauté in a pan with butter for 2-3 minutes
  • Ad the crushed grains to the pan and stir for 3-4 minutes
  • Ad the chicken broth little by little and keep stirring
  • Let it simmer till the grains are soft but with a little bit of resistanse, approx. 15 minutes and put aside
  • Put the carrots in between the logs and lett them bake for 20 minutes. When they are done peel away some of the black soot
  • Boil the savoy cabbage in salty water swiftly for 30 seconds
  • Slice the fish filets into strips and put in a stainless strainer
  • Ad the wet juniper branches to the fire and put the strainer with the fish on top. Cover with a lid and let it smoke for 2 minutes until the branches catch fire.
  • Brown the butter in a pan with the juniper berries
  • Re-heat the grains and stir in sour cream and grated cheddar
  • Top it off with cabbage, carrots, smoked trout and a dash of cultured milk
