On the list of the most sustainable, delicious and healthy fish, herring rules supreme. We have a millennia-long tradition in eating fish in Scandinavia.

PREPARATION:

  • Finely chop the herring.
  • Mix with mustard, celeriac, celery, dill, chervil, and oil.
  • Form into two or four rounds and place on top of toasted rye bread. Place a quail egg yolk on top.
