PREPARATION:

  • In a medium bowl, combine potatoes, leek, bay leaves, stock and cream and bring to boil. Cook until the potatoes and leek are cooked. Remove the bay leaves. Crush or blend the mixture until smooth and velvety.
  • Transfer to soup plates. Just before serving, add a good lump of smoked salmon and a spoonful of salmon roe, if using, to each plate.
