Sour Cream Waffles with Cloudberries and Salted Caramel Sauce

Waffles: Ingredients:

  • 2 eggs

  • 1 tablespoon real vanilla sugar

  • 1.2 cups sour cream

  • 0.42 cups cultured buttermilk

  • 200 g / 7.05 oz all-purpose flour

  • 0.5 teaspoon baking powder

  • 0.5 teaspoon salt

  • 0.42 cups cold water

  • Butter for cooking

Instructions:

  1. Whisk together eggs, sugar, sour cream, buttermilk, flour, baking powder, and salt until smooth batter forms. Thin with water if needed.

  2. Let the batter rest for at least 30 minutes.

  3. Heat a waffle iron, add butter, cook waffles.

  4. Top with cloudberries, caramel sauce, and grated chocolate.

Caramel Sauce: Ingredients:

  • 100 g / 3.53 oz sugar

  • 2 tablespoons water

  • 50 g / 1.76 oz butter

  • 100 g / 3.53 oz heavy cream

  • 1 teaspoon Maldon salt

Instructions:

  1. Cook sugar and water into light caramel.

  2. Stir in butter and cream, cook together, add salt. Remove from heat.
