Fresh Asparagus and Cucumber Salad

INGREDIENTS:

List of ingredients

16 asparagus, bottom part removed, cut into 1 inch (2 ½ cm) slices

1 cucumber, coarsely chopped

8 spring onions, white and light green parts only, coarsely chopped

juice of 1 lemon

3-5 tablespoons olive oil

1-2 tablespoons fresh tarragon leaves

freshly ground black pepper

flaky sea salt, such as fleur de sel

PREPARATION:

  • Place the cucumber, spring onion and asparagus in a bowl.

  • Add tarragon and freshly ground pepper, salt and olive oil.

  • Squeeze one whole lemon over the salad and mix well.
