Juniper and Lingonberry Infusion

INGREDIENTS:

One medium size teapot

1-2 small branches of juniper

1 teaspoon juniper berries

½ cup, 1,2 dl lingonberries (or cranberries)

1-2 teaspoons wild blueberries

honey, optional

PREPARATION:

I use juniper sprigs, and juniper berries plus lingonberries and blueberries to make a fresh tasting infusion.

If you want to sweeten it, use honey. I prefer to have it unsweetened. If you cannot find fresh lingonberries, it might be easier to find dried. You can also use dried cranberries.

Place the juniper branches and juniper berries in a teapot. Cram as much of the juniper branches ad you can fit into the teapot, tear them up a little. Add boiling water to cover, about 1 quart / 1 liter.

Leave to seep for a couple of minutes. Add the berries to a large tea strainer. Either use a tea plunger or a tea strainer made of cloth. Leave to infuse a couple of minutes. Press on the berries to release flavor and color. Serve.
