Four Seasons Shrimp Salad

INGREDIENTS:

List of ingredients

3 lb. shrimp


15-20 button mushrooms, quartered

4 medium tomatoes, diced into 1 inch pieces

1 tbs. butter


2 scallions, sliced


1-2 tbs. tarragon vinegar


Extra virgin olive oil

Salt and pepper to taste

PREPARATION:

  • Melt the butter and sauté the mushrooms for 4-5 minutes in a medium-sized frying pan. Leave to cool a little.

  • Meanwhile, in a salad bowl combine the shrimp, the tomatoes, the scallions, the olive oil and the tarragon vinegar. Toss together.

  • Add salt and pepper to taste.
