Salad with Blackberries and Goat Cheese

INGREDIENTS:

Mixed salad or fresh spinach, enough for four persons

½ cup (1 dl) fresh bread, cut into small cubes

¼ cup (½ dl) blackberries (you can use blueberries)

½ pound (200 grams) goat cheese

¼ cup (½ dl) raisins

3 tablespoons roasted wheat kernels

2 small spring onions

Vinaigrette

¼ cup (¾ dl) olive oil

3 tablespoons balsamic vinegar

2 tablespoons honey

Salt and pepper

PREPARATION:

  • Rinse the salad.

  • Slice the spring onions thinly and mix with the salad and place on a platter.

  • Place the bread, berries, cheese, raisins and the roasted wheat kernels on the salad.

  • Mix the vinaigrette ingredients and season with salt and pepper. Pour over the salad before serving.

Wine and Drinks

Salads are always a bit tricky to find good wines with. However, light sparkling wines and beer for the economist is the safest bet you can make.

Economy: Light beer.

Mid-range: Sparkling wine Australia or California

Gourmet: Champagne, France.
