Norwegian Krumkake with Cloudberries & Sour Cream

INGREDIENTS:

2 pcs egg

3½ oz sugar

3½ oz melted butter

3½ oz flour

½ tsp salt

1 tsp grounded cardamom

3 oz melted butter to brush waffle iron

1 lb cloudberries (substitute; Blueberry, raspberry, gooseberry, lingon berries)

4 tbsp sour cream

PREPARATION:

 

  • Preheat waffle iron or if you have a proper “krumkake”-iron.

  • Beat eggs and sugar in large bowl using a whisk until fluffy.

  • Add flour, cardamom and salt. Keep stirring and add a little melted butter to a smooth paste.

  • Brush preheated waffle iron with butter. Pour batter onto hot waffle iron and close it. Cook until golden brown.

  • Cool down and the waffle will instantly become crispy.

  • Serve with a mix of fresh cloudberries and sour cream.
