INGREDIENTS:

List of ingredients

10 fillets of salt herring, soaked overnight in a mixture of milk and water

1 thinly sliced red onion

1 thinly sliced carrot

1 star anise

7 – 8 black peppercorns

7 – 8 white peppercorns

8 clove spikes

1 tbs. mustard seeds

3 bay leaves

1 – 3 tbs. sugar

2 dl. (6,7 fl.oz) boiling water

½ dl. (1,7 fl. oz.) 7% vinegar, or more

PREPARATION:

  • Place the sugar and spices in a bowl and mix with boiling water. I do not like the herring to be too sweet.

  • Add the vinegar. I like the marinade to taste fairly sharp.

  • Place the herring, red onion and carrot in layers in a Kilner jar. Pour in the marinade.

  • Leave to stand for four days in the fridge before serving.
