Cold Cucumber Soup with Freshwater Crayfish

INGREDIENTS:

List of ingredients

1 cucumber, diced

1½ cups (4 dl) cultured milk

½ cup (1 dl) cream

1 onion, coarsely chopped

2 potatoes, boiled

2 sticks of celery, diced

2 tbs. dill, finely chopped

2 tsp. dried ramsons

2 tsp. cucumber vinegar

2 tsp. celery salt

Pepper

4 freshwater crayfish

PREPARATION:

  • Blend together the cucumber, cultured milk, cream, potatoes, celery, dried ramsons, dill, cucumber vinegar and celery salt to create a cold soup.

  • Serve the cold soup with the freshwater crayfish.
